One snack, many names
In Hindi, pani means water and puri is a small puffed fried bread. Its exact origin remains uncertain, but panipuri is now found all over India and in neighbouring countries, under different names depending on the region:
| Name | Region where it is common |
|---|---|
| Panipuri | Western India, including Mumbai |
| Golgappa | Delhi and parts of the north |
| Puchka | Bengal |
| Gupchup | Odisha |
| Pani ke batashe | Uttar Pradesh |
The three components of panipuri
- The puri: a small ball of dough, made with semolina or flour, fried until it puffs up and becomes hollow and crispy.
- The filling: most often mashed potatoes, chickpeas or beans, onion and spices such as roasted cumin or chaat masala.
- The pani: a spiced, tangy water blended with mint, coriander, green chilli, lemon or tamarind; some add a sweeter tamarind chutney.
The preparation steps
- Make the puris, or buy them ready-made from an Indian grocery store.
- Prepare the filling and the spiced water, served well chilled.
- Pierce the top of the puri with a fingertip or a small spoon.
- Fill with a little filling, then top up with spiced water at the last moment.
How to eat it
- Eat it in a single bite, just after filling it, before the water softens the shell.
- Enjoy it with others: in India, it is often eaten standing around the vendor, who fills the puris one by one.
- Adjust the chilli in the water to your taste: it can be very spicy.
